Over two intensive days, the TCB team will guide attendees through the technical requirements for liquid excellence. These sessions are divided into specific modules, focusing on the pillars of modern drink-making:
MONDAY 4th MAY
13:00 – 14:00 | Balance: Liquid Engineering : Master the nuances of sweetness (Brix), acidity (pH), and the often-overlooked element of minerality. We will explore how to use professional tools like refractometers and pH meters to calibrate your cocktails. Move from volume-based measurements to "Syrup Math" and weight-based ratios to ensure every guest receives an identical, high-quality experience.
14:30 – 16:00 | Enzymes: Unlocking New Textures and Flavours :Discover how to use Pectinase, Amylase, and other biological catalysts to unlock unique textures, enhance yield, and clarify liquids in a modern bar environment. This session reveals how to break down cellular structures to create crystal-clear juices and unique syrups that were once thought impossible.
16:30 – 17:30 | Clarification 101 : From centrifuges and vacuum glass filters to the humbler coffee filter and cheesecloth, we cover the full spectrum of clarification. Understand the mechanics behind gel, protein, and enzymatic clarification to achieve visual brilliance without sacrificing the soul of the flavor.
17:45 – 18:45 | Carbonation - Not a Flavour, But a Sensation : Learn the "force" behind the fizz. We will explore the technical setup of carbonation rigs, iSi systems, and counter-pressure filling. This is about managing CO2 and Nitro to create a texture that stays bright and vibrant until the very last drop.
TUESDAY 5th MAY
13:00 – 15:30 | Flavour Extraction 101 : Uncover the secrets of maximizing flavor through ultrasound, rapid infusion, and precision maceration. We explore the tools—from the Sous-Vide to the Squasher—that allow you to pull the deepest possible essence from your ingredients.
16:00 – 17:30 | Distillation X Cocktail Bar : Step into the world of low-temperature distillation. Using the Rotavapor and Rikaroma equipment, we demonstrate how to capture the delicate, fresh essence of ingredients that traditional heat-based methods would otherwise destroy.
